Fifteen are making the most of winter's fare with hearty, traditional game, like roast pheasant; venison ragu and Cornish partridge; some of the counties beautiful, lesser known varieties of fish; and delicious vegetables like wild fennel and samphire from Cornwall's coastline and moorlands.
